Green Mountain Pizza


Serves 8

3/4 cup warm water
1 1/2 teaspoons honey
1 teaspoon yeast
1/4 cup olive oil
1 cup all-purpose flour
1 cup whole wheat flour
1 teaspoon salt

Nonstick spray
Cornmeal

3/4 cup Vegetable Marinara
8 ounces of shredded mozzarella cheese
2 cups of vegetables of choice

Mix warm water, honey and yeast. Let sit until it rises and bubbles up. Add oil, flour, and then salt. If dough is too wet, add more flour so it is not sticky. Knead for five minutes.
Spray a bowl with nonstick spray, put the dough in and cover with plastic wrap. Let rise for one hour or until doubled in size. Preheat oven to 350° F. Sprinkle corn meal onto a pizza pan. Roll dough out to the size of your pan (should be about 1/4-inch thick) and transfer to pan. Bake for 8 - 10 minutes and remove from the oven to cool. Spread a cup of marinara on the crust, top with cheese and your choice of vegetables. Return to oven and bake another 15 minutes or until cheese is melted and bubbly.
